Almond Cake

Delicious treat for dessert or also as a coffee cake

3/4 C Butter

1 1/2 C Sugar

1 t. Vanilla

1 1/2 t Almond Extract

2 Eggs

1/2 teaspoon Salt

1 1/2 C Flour
Preheat oven to 350 degrees. Melt butter. Pour melted butter in a bowl and stir in sugar. Add eggs. Stir until creamy. Add other ingredients. Grease bottom and sides of 9 inch round pie pan. Spread batter in pan. Sprinkle on top with:
1 T Sugar and 3/4 C Almonds. Bake 40 min. Serve warm or cool!

Lemon Chicken Soup

(serves eight)

1 roasted chicken (remove the skin and bones)
(purchase cooked at Costco or a grocery store)
3 Quarts Water
1/ 4 Cup Chicken Base
1/ 2 Cup Lemon Juice (RealLemon or fresh)
16 oz package Orzo (type of pasta)
Pepper to taste
Bring water to boil, add bite sized pieces of chicken, chicken base, lemon, bring back to boil, then add Orzo and cook 12 minutes more until the Orzo is tender. This is a short cut recipe for the original Greek recipe. Enjoy!

Easy Shrimp Cocktail

1 pound frozen shrimp, cooked and cleaned
½ cup catsup with horseradish to taste
Lemons to garnish

Rinse frozen shrimp with cold water until almost thawed. Arrange on platter, garnish with sliced lemons, and place cocktail sauce in bowl in center of platter. Serve or refrigerate until ready (the same day).

Pumpkin Pie Cake

Pastry: 1 Pkg Yellow Cake Mix, ½ cup melted Margarine, and 1 Egg. Blend above ingredients, then save 1 cup for topping recipe. Press the rest into bottom of 9×12 in baking dish.

Filling: 1 large can Pumpkin, 1 can Canned Milk, 3 Eggs, 2/3 cup Milk, ½ cup Brown Sugar, 1 teaspoon Pumpkin Spice. Blend ingredients and pour over pastry.

Topping: 1 cup reserved cake mixture, ¼ cup Brown Sugar, ¼ cup margarine, ½ cup chopped Pecans. Blend together & drop on top of filling, and then sprinkle with cinnamon.

Bake at 350 degrees for 50 to 60 min. until done. Top with Cool Whip if desired.
